This cake is sooo creamy and delicious!
Ingredients
- 12 Dates (pitted and chopped)
- 1 tsp Baking soda
- 1 stick Vegan butter (room temperature)
- 1/3 cup Cane sugar (or honey)
- 2 Egg replacers
- 1 tsp Vanilla
- 1 cup Unbleached all-purpose flour
- 1/4 cup Wheat pastry flour
- 1/4 tsp Sea salt
- 1 1/2 tsp Baking powder
- 1/3 cup Carrots (grated)
- 1 tsp Cinnamon
- 1 tsp Nutmeg
- 1 3/4 cup Water
- 1 cup chopped Walnuts (less if you're not a big nut fan)
Directions
Preheat oven to 350 degrees. Oil and
flour a 9 inch pan.
In a sauce pan bring dates, cinnamon,
nutmeg and water to a boil. Cook for 5 minutes or until it becomes
slightly think. Let it sit for 1 minute then add baking soda. Set
aside.
In a bowl, combine flour, salt, and
baking powder. Set aside.
In a separate bowl combine butter and
sugar. Mix well. Add vanilla extract and egg replacer. Next add
flour mixture and mix. Add date mixture, carrots and walnuts mix
until combined. Pour into the pan. Cook for 40 minutes or until
toothpick comes out clean.
