Black Beans w/ Avocado

 Ingredients

  • 1 1/2 cups Black beans
  • 1/2 cup Corn
  • 2 large Tomatoes (chopped)
  • 1 large Onions (chopped)
  • 2 Garlic cloves (diced)
  • 1 Green pepper (chopped)
  • 1 tsp Cayenne pepper
  • 1 tsp Chili powder
  • 2 Bay leaves
  • 1 tsp Basil
  • 1 tsp Cumin
  • 1 tbs Olive Oil
  • Sea salt (optional)

Directions

Slow cook beans in a slow cooker for 3 hours or until beans are soft (do not drain water once beans are done).  Heat olive oil in a pot. Add onions and peppers. Cook for 5 minutes. Add cooked beans with water, corn, tomatoes, garlic, cayenne pepper, chili powder, cumin, bay leaf and basil. Cover and cook for 30 minutes or until mixture thickens. Serve with avocado.
